Sweet potato, gnocchi and pumpkin pudding... they are all vegetable contained!

An APU’s fourth-year student, Satsuki Dote who majors in APS conducted a cooking show where she teaches participants how to make vegan food last year as a member of Eco Week at APU. She taught participants how to make sweet potato, gnocchi and pumpkin pudding for the first time.

Dote became a vegan and started following a vegan diet. The reason why she started it is because of her curious personality, and being educated about the positive aspect of veganism. Actually, she watched a lot of documentaries such as Cowspiracy(2014), Forks Over Knives(2011), What the Health(2017), and Eating(2017). All of these movie’s main topic is veganism. However, they talk about veganism from very different perspectives such as how health, environmental, animal, cruelty, and political aspects are affecting ourselves and the earth.

A number of people are starting to have a vegan life as veganism is getting very famous currently. Eating healthy food only in order to lose their weight or either to be healthier is in style and people tend to think to have a status of being vegan is fashionable which may be a reason why so many people are beginning to be vegan. Compared to this, Dote has different opinion towards vegan. She thinks that starting vegan life because of these reasons turns out to be hard. However, once people understand the morality and ethical aspect of veganism, it is not a choice but a lifestyle.

In terms of education, she hit a road to Hawaii in order to learn the field of hospitality and tourism as an exchange student. The reason why she chose Hawaii for her destination is that the University of Hawaii is well known as to have a reputable hospitality and tourism major. She said that my goal was to witness the growing industry first hand and gain experience her doing internships in Hawaii. However, during her stay, her life changed completely in terms of lifestyle, perspective on the tourism industry, and growing as an individual.

As well as proficient education, traveling plays an significant role in enhancing her life quality. She travels around and witnesses different cultures, people, language, and landscapes which causes broadening her perspective. Dote believes that seeing the differences and similarities within our nation without judgment is the true form of peace.

Additionally, she thinks that in spite of having a different opinion on something, and different understanding of the same subject, it is important to accept and understand each other. “Traveling to me is not just a cultural exchange but it is a way of building,” she said.
